How can I create a delivered mail list? I would like for it to contain the TO address and the Subject. Thanks!

I would like to create a list of email that SpamFilter has passes across as being OK. Just from and subject of the mail. The idea would be to have a quick list to scan to see if it is blocking the majority of the spam. A few always slip thorugh and this might be a good catch then then adjust keywords, etc... Thanks!

No sorry, that capability is not available. However the logfiles will contain a list of emails with the TO and FROM that were passed (the subject is not logged).
